BACKGROUND : Marinating is a Chinese traditional meat-processing method using aged brine that brings popular flavor together with food safety issues. In this study a novel method named quant. marinating (QM) was developed to improve Chinese traditional marinating (TM). Flavor compounds and sensory profiles of two marinated products were determined to verify if the improved marinating method could maintain the characteristic flavors of TM. RESULTS : Fifty-four, 60, 60, 60 and 44 volatile flavor compounds were identified from four processing stages of QM and TM resp. Contents of taste compounds first increased and then decreased in the processing stages of QM. The total free amino acid contents of QM and TM products were 789 and 536 mg per 100 g resp. The total nucleotide content of QM product (22.21 mg per 100 g) was higher than that of TM (20.75 mg per 100 g), while the fatty acid content of QM product (26.66 mg g-1) was lower than that of TM (44.43 mg g-1). Finally, QM received higher sensory scores than TM. CONCLUSION : Volatile flavor compounds, taste compounds and sensory properties of QM were richer than those of TM, indicating that QM can not only maintain the original aroma of TM but also have advantages in taste compounds © 2015 Society of Chem. The exptl. data indicate that addition of the 5-dialkylamino groups on the benzene ring of chlorsulfuron greatly accelerated degradation in alk. soil. These chlorsulfuron derivatives degrade 10.8 to 51.8 times faster than chlorsulfuron and exhibit excellent crop safety on wheat and corn (through pre-emergence treatment). With a comprehensive consideration of structures, bioassay activities, soil degradation and crop safety, it could be concluded that 5-dialkylamino-substituted chlorsulfuron derivatives are potential green sulfonylurea herbicides for pre-emergence treatment on both wheat and corn. The study also provides valuable information for the discovery of new sulfonylurea herbicides for crop rotation. Addnl., the effects of betel leaf extracts on microbial activity, biochem., sensory score, and biogenic amines formation were monitored in S. albella stored with traditional ice and ice with betel leaf extract during a 14-day storage period. Identification of bioactive compounds from P. betle revealed the presence of potent biopreservative compounds such as 4-methoxy-isophthalic acid, phenol, and propanoic acid. The effect of blended P. betle at two different concentrations (0.05% and 0.1% /L of distilled water) in the ice medium was tested for the protection of sardine meat and compared with preservation in traditional ice. Inhibitory effects (p < 0.05) on the microbial proliferation and biochem. markers of fish deterioration were evidenced for ice containing both concentrations of P. betle after 10-14 days compared with the control. In the improvement of stability and lifetime of bistable electrochromic (EC) materials, the microcapsule technique was used to protect the EC materials in a polymer shell, which was named bistable EC microcapsules (BEC-Ms). However, the particle size and shell thickness of microcapsules will affect their properties, such as response time, coloration efficiency, and bistable property. In this study, BEC-Ms was prepared via solvent evaporation method filled with PMMA as the shell and the mixture of crystal violet lactone (CVL), tetrabutylammonium perchlorate (TBAP), and phase change material (PCM) as the core. The particle size and shell thickness of microcapsules were adjusted and systematically investigated by controlling the emulsification rate and mass ratio of polymer shell to core. The optimized BEC-Ms with 2 μm size and 22.94 nm thickness showed excellent performance including fast response time (about 1 s), far lower than the safety of human body drive voltage (2 V), coloration efficiency (932 cm2 C-1), and good bistability (216 h). This approach provides a viable and alternative to flexible energy-efficient wearable display-related devices and smart textiles.
