Fruit beer, a recognized special beer, is produced with fruit addition during fermentation, maturation, or the refermentation process. Volatile organic compounds of seven fruit beers were investigated using a gas chromatog.-ion mobility spectrometry (GC-IMS) technique. A total of 38 compounds were identified, and volatiles in the seven beers differed greatly. The concentration of nonanal, Me octanoate, Et 2-methylbutanoate, Pr hexanoate, and Me 2-methylbutanoate was high, and the first two compounds were the characteristic volatiles in the pineapple beer. Apple beer had a higher concentration of Bu acetate, iso-Bu acetate, Me heptanoate, and butanal. Bu acetate was the specific apple beer volatile. Peach beer showed a higher concentration of 3-methylbutanal, methional, phenylacetaldehyde, α-pinene as well as 2,3-di-Et 5-methylpyrazine, and the last was detected only in the peach beer. Et heptanoate and maltol were abundant in the cranberry beer, whereas linalool, furaneol, and benzaldehyde were rich in the cherry beer, and benzaldehyde was the characteristic cherry beer volatile. This paper describes the composition of volatile compounds in 19 different wine distillates was studied by gas chromatog. (GC) coupled with flame ionization (FID) or mass-spectrometric (MS) detector. The studied samples were divided into two groups depending on the way of their production and geog. region. The effectiveness of direct injection, headspace, solid phase extraction (SPE), solid phase microextraction (SPME) and liquid-liquid extraction (LLE) was compared. Moreover, the effect of exptl. conditions of preconcentration methods such as type of sorbent, temperature, time or solvent removal procedure was studied in details. The repeatability of particular sample preparation procedure was evaluated by comparison of peak areas for randomly selected compounds obtained from 4 parallel measurements. It was shown that the most suitable sample treatment procedure in terms of repeatability is SPE followed by direct injection and headspace. LLE and SPME provide higher variability of peak areas, thus utilization of internal standard for quantification is recommended. On the contrary, the most suitable sample treatment procedure in terms of the number of different type of compounds is liquid-liquid extraction into CH2Cl2. By this method, more than 240 compounds have been extracted from wine distillates produced by classical technol. Composting operations taking place at municipal solid waste (MSW) treatment plants represent a source of volatile organic compounds (VOC) to the atm. In this work the changes in the VOC composition of a composting pile were monitored and compared to the VOC emitted from the same pile in order to understand the impact of composting operations on the release of VOC. Guided by an iterative approach that combined biol. screening and machine learning, we selected 214 odorants to characterize the response of MOR18-2 and its neighboring glomeruli. We found that a combination of conventional physico-chem. and vibrational mol. descriptors performed best in predicting glomerular responses using nonlinear Support-Vector Regression. We also discovered several previously unknown odorants activating MOR18-2 glomeruli, and obtained detailed MRRs of MOR18-2 glomeruli and their neighbors. Our results confirm earlier findings that demonstrated tunotopy, i.e., glomeruli with similar tuning curves tend to be located in spatial proximity in the dOB. In addition, our results indicate chemotopy, i.e., a preference for glomeruli with similar physico-chem. MRR descriptions being located in spatial proximity. Together, these findings suggest the existence of a partial chem. map underlying glomerular arrangement in the dOB. In this research, hydrodistillation ultrasonic-assisted green technique was applied to extract the essential oils from bitter orange peel. The effects of independent factors (volume/mass ratio (X1), ultrasonic time (X2) and hydrodistillation extraction time (X3)) on the quant., phenolic and antioxidant properties of essential oils were investigated. Linear and quadratic polynomial models with suitable ANOVA results (model p-values <0.0003, R2 values of 0.84-0.95, adjusted R2 values of 0.82-0.90, predicted R2 values of 0.71-0.75, and lack of fit p-values >0.5) were used for fitting the responses. Two optimal extraction conditions for bitter orange peel essential oils were determined as follows: optimum responses (OR) with maximum essential oil volume (0.99 mL), maximum TPC (108.33 mg GAE/100 mL) and min. IC50 (251.56 μl) could be achieved at X1: 6.00 mL/g, X2: 39.10 min and X3: 4.72 h, and optimum phenolic compounds (OP) with maximum TPC of 190.75 mg GAE/100 mL could be obtained at X1: 13.89 mL/gr, X2: 3.75 min and X3: 4.92 h. The most predicted values for optimum conditions were in good agreement with exptl. data. The disk diffusion experiments showed high antimicrobial activities of the optimum essential oils against E. coli. The GC-MS results proved limonene was the main compound in both optimum essential oils. These bitter orange peel essential oils with suitable antioxidant and antimicrobial activities, and healthy compositions, could be considered as dietary and pharmaceutical supplements. Changes in volatile compositions were determined in Rubygem strawberry variety related to pre and postharvest hexanal application during shelf life. For this concern, Rubygem variety was treated with hexanal vapor and spray applications which were, doses (0%, 0.01%, 0.02%) pre and postharvest after hexanal applications strawberry fruits were stored at 2°C and RH 90% conditions. Effects of hexanal spray and vapor applications of strawberry fruit volatile profiles were analyzed with HS-SPME/GC-MS techniques. Differences among treatments were identified in volatile compositions at 3 days intervals during 15 days of shelf life. The results showed that, hexanal application type and concentration effected the percentage of volatile composition of esters, ketones, terpens, alcs., acids, aldehydes, and others during shelf life. The hexanal application form and concentration were effected the amount and composition of volatiles of Rubygem strawberry fruit. As a result, hexanal spray application has important effects on ester percentage, however, hexanal vapor treatment increased the alcs. percentage of strawberries at the end of shelf life. Practical applications : Application of organic substances of hexanal pre and postharvest season has been successfully used due to their environmentally friendly effects. Hexanal is volatile gases, organic aldehydes which are the source of plant extract and used as food additives. There are many research on hexanal application to prevent microbial growth after harvest.
