Detergents are commonly employed for solubilization and stabilization of integral membrane proteins. Their effects on the charge states of detergent-solubilized membrane proteins in native mass spectrometry measurements have previously been described. These effects can be mediated through the transmembrane region directly interacting with the detergent micelle or through the soluble domains of the proteins getting in close contact with detergent micelles during electrospray ionization. Here, we explore the effects of detergent micelles on soluble proteins during native mass spectrometry aiming at distinguishing these two events. Specifically, we employ two non-ionic and one zwitterionic detergents as well as a variety of standard proteins differing in size, oligomeric state and surface hydrophobicity, and evaluate the observed charge states in the absence and presence of detergents. Using ion mobility-mass spectrometry, we assess the proteins’ stability as well as the ability to maintain non-covalent interactions with ligands. Finally, we examine lipid transfer from mixed detergent-lipid micelles containing the various detergents to soluble proteins. In summary, we found that C8E4 detergent reduces the proteins’ charge states, stabilizes the proteins and facilitates lipid transfer. Aromatic volatile compounds are important contributors to fruit quality that vary among different cultivars. Volatile compounds detected in the fruit of both cultivars exhibited similar trends across different developmental stages. In the early stages of “Ruixue” fruit development (60 days after full bloom), there were fewer volatile compounds, mainly aldehydes (87.0%). During fruit maturation (180 days after full bloom), the types and amounts of volatile compounds increased, mainly including esters (37.6%), and alkenes (23.2%). The total volatile concentration, the types of major volatile compounds, and their relative content in both cultivars varied across different stages. Gene expression anal. indicated that the upregulation of MdLOX, MdAAT2, and MdADH3 was associated with increased aroma compound content, especially esters, during fruit development in both cultivars. BACKGROUND : Marinating is a Chinese traditional meat-processing method using aged brine that brings popular flavor together with food safety issues. In this study a novel method named quant. marinating (QM) was developed to improve Chinese traditional marinating (TM). Flavor compounds and sensory profiles of two marinated products were determined to verify if the improved marinating method could maintain the characteristic flavors of TM. Contents of taste compounds first increased and then decreased in the processing stages of QM. The total free amino acid contents of QM and TM products were 789 and 536 mg per 100 g resp. The total nucleotide content of QM product (22.21 mg per 100 g) was higher than that of TM (20.75 mg per 100 g), while the fatty acid content of QM product (26.66 mg g-1) was lower than that of TM (44.43 mg g-1). Finally, QM received higher sensory scores than TM. CONCLUSION : Volatile flavor compounds, taste compounds and sensory properties of QM were richer than those of TM, indicating that QM can not only maintain the original aroma of TM but also have advantages in taste compounds © 2015 Society of Chem. Maternal metabolism changes substantially during pregnancy. However, few studies have used metabolomics technologies to characterize changes across gestation. We applied liquid chromatog.-mass spectrometry (LC-MS) based non-targeted metabolomics to determine whether the metabolic profile of serum differs throughout the pregnancy between pre-eclamptic and healthy women in the FINNPEC (Finnish Genetics of Preeclampsia Consortium) Study. Microbial degradation of plastic represents a sustainable approach for PC reduction In this study, a bacterial strain designated Pseudoxanthomonas sp. strain NyZ600 capable of degrading PC was isolated from activated sludge by using di-Ph carbonate as a surrogate substrate.
