Daqu is the natural mixed starter culture for special-flavor Baijiu (the unique famous Baijiu in Jiangxi Province) brewing. Peak-temperature effects of Daqu on chem. compositions, microbial community succession and volatile substances in Jiupei fermented with middle peak-temperature Daqu (MTJP) and Jiupei fermented with high peak-temperature Daqu (HTJP) during special-flavor Baijiu brewing were determined It was found that ethanol and reducing sugar had significantly (P < 0.05) higher contents in MTJP than HTJP. Peak-temperature of Daqu had a greater impact on the fungal community than the bacterial community in Jiupei. The total content of volatile substances in HTJP was 1.5-3 times of those in MTJP during fermentation Most esters were pos. correlated with Pichia, Lactobacillus and Bacillus genera in HTJP, but pos. correlated with Aspergillus, Monascus, Pichia and Lactobacillus genera in MTJP. In a word, middle peak-temperature Daqu (MT Daqu) could enhance the ethanol production through Aspergillus genus with high glucoamylase activity and high peak-temperature Daqu (HT Daqu) could enhance the accumulation of volatile substances through more abundant flavor-producing microorganisms. Chocolate is one of the most popular sweets in the world. In recent years, the bean-to-bar process for chocolate production has attracted global attention. Bean-to-bar is a method of managing the whole production process from cocoa beans to chocolate bars, including single-origin chocolate (SOC). Many manufacturers aim to produce high-quality chocolate to maximize the flavor of cocoa beans. However, chocolate compounds are very complex due to many processes, and there are a limited number of studies on the SOC produced from the bean-to-bar process. Therefore, understanding the effects of processing is important for the growth of the chocolate industry. The objective of this study was to investigate the processing effect on the component changes of SOC during the bean-to-bar process. In this study, the component changes during the bean-to-bar process were monitored using gas chromatog./mass spectrometry (GC/MS). Then, the characteristics of SOC from five regions in Indonesia were further investigated. Lastly, the component profiles were combined with the data obtained from sensory evaluation. Our results showed that the influence of the manufacturing process was greater than that of the difference in the cocoa production area. Moreover, 1-pentanol, raffinose, and heptanoic acid were correlated with sweetness and dairy flavor, whereas glutamic acid, tartaric acid, 3-methyl-2-butanone, mannitol, and Et cinnamate were correlated with bitterness, astringency, and cocoa flavor, which were shown to be affected by fermentation, roasting, and sugar addition This information might provide a basis for improving the chocolate production process and its quality related to the component profiles.

Sensory interactions exist between 3-alkyl-2-methoxypyrazines and various volatiles in wines. In this study, the binary blending of Cabernet Franc wines containing high levels of MPs and three monovarietal red wines with two proportions was conducted after fermentation Volatiles were detected by gas chromatog.-mass spectrometry (GC-MS), and wines were evaluated by quant. descriptive anal. at three-month intervals during six-month bottle aging. Results showed blending wines exhibited lower intensity of ‘green pepper’, especially CFC samples blended by Cabernet Sauvignon wines with an even higher concentration of 3-isobutyl-2-methoxypyrazine (IBMP). Based on Pearson correlation anal., acetates could promote the expression of ‘tropical fruity’ and suppress ‘green pepper’ caused by IBMP. Pos. correlation was observed among ‘green pepper’, ‘herbaceous’, and ‘berry’. The concentration balance between IBMP and other volatiles associated with ‘green pepper’ and fruity notes was further investigated through sensory experiments in aroma reconstitution. Higher pleasant fruity perception was obtained with the concentration proportion of 1-hexanol (1000μg/L), isoamyl acetate (550μg/L), Et hexanoate (400μg/L), and Et octanoate (900μg/L) as in CFC samples. Blending wines with proper concentration of those volatiles would be efficient to weaken ‘green pepper’ and highlight fruity notes, which provided scientific theory on sensory modification of IBMP through blending technique.

Ganoderma lucidum is a mushroom commonly used in folk medicine especially Traditional Chinese Medicine (TCM) but information on its nutritional and chem. profiles remains insufficient. This work aimed at evaluating proximate composition and identification of bioactive compounds in ethanolic extract of G. lucidum. Pulverized G. lucidum was suspended in ethanol in 1:10 and extraction was carried out by rotary evaporation to produce G. lucidum extract (GLE). Proximate composition of the sample was analyzed. Fourier Transform IR (FTIR) spectroscopy was carried out to identify different functional groups in GLE. Gas Chromatog.-Mass Spectrometry (GC-MS) was used to determine the bioactive compounds of the sample. Proximate anal. revealed that the amount of carbohydrate in sample was the highest (44.95%), followed by protein (15.75%). FTIR results showed that OH, C=O, C-OH, N-H 1* and 2* and alkyl halide are functional groups in GLE. A total of twelve (12) bioactive compounds were identified and the most prevailing compound in GLE was Et octadeca-9,12-dienoate (45.95%), followed by ethylhexadecanoate / Et palmitate (18.09%). Guaiacol (4.95%), octadecanoic acid (5.37%), ethylcyclohexane (3.31%) were also present. It can be inferred from this study that G. lucidum is nutritional and contains bioactive compounds that are useful in nutraceutical and pharmaceutical industries.

The creation of artificial microenvironments with specific functionalities to mimic multiple cascade biocatalytic processes in cells is highly desirable. Here, Zr-based large-pore mesoporous metal-organic frameworks (mesoMOFs) were successfully developed for the construction of such spatially organized cascade bioreactors. Thanks to the mediating effect of the Hofmeister ion and the flexibility of Zr-MOFs, large mesopores and functional microporous mesopore walls were integrated into a single nanoplatform, ensuring the efficient mass exchange between the interconnected pore units with different sizes. As a proof of concept, natural superoxide dismutase and catalase mimic were spatially positioned in these hierarchical mesoMOFs, which formed a cascade antioxidant defense system and presented an efficient intracellular reactive oxygen species scavenging ability. This model is expected to set a conceptual guideline for the design of compartmentalized bioreactors in nanoscale MOFs to mediate the complex intracellular catalytic networks.

Our study was carried out to evaluate the effect of lipoic acid (LA) on the densitometric properties, structure and mech. strength of the mandible of Wistar rats with developing osteopenia. The study used 42 sham-operated (SHO) and ovariectomized (OVX) rats. The OVX rats were randomly divided (n = 6) onto two controls treated s.c. with physiol. saline (OVX-PhS) and 17β-estradiol (OVX-E2), resp., and onto four exptl. OVX groups that received LA in the doses of 12.5, 25, 50 and 100 mg/kg/day for 28 days. The results demonstrated that the lack of estrogen brought about osteopenic bone changes, especially in the trabecular compartment. In addition, while the usage of LA in the doses of 12.5 and 25 LA had no effect in OVX rats, the dose of 100 effectively inhibited osteopenic changes of the mandible. This dose maintained structural, densitometric and mech. parameters at levels like that in the SHO and OVX-E2 groups by inhibiting the destructive influence of oxidative stress. Dose 50, however, was revealed to be the most effective. It not only inhibited atrophic changes and the influence of oxidative stress, but also stimulated the formation of mandibular bone tissue. Our results suggest that the administration of LA is effective in preventing atrophic changes in the mandibular bone tissue in conditions of ovarian hormone deficiency and suggest its potential in the therapy of osteoporosis.

Objective: To compare the efficacy of nitazoxanide and probiotics in children presenting with acute watery diarrhea presenting at Tertiary Care Hospital, Karachi. Material andMethods: The study design was randomized control trial. Study was conducted at Department of Pediatrics, Ziauddin University Hospital, Karachi. The duration of this study was Six months after approval from 02 Dec. 2019 to 02 June 2020. Data was prospectively collected from patients after taking a verbal consent. 160 patients who met the diagnostic criteria were included. Brief history was taken and demog. information was entered in the Performa. Quant. data was presented as simple descriptive statistics giving mean and standard deviation and qual. variables was presented as frequency and percentages. Results: Out of 80 patients in the nitazoxanide group mean age, duration of diarrhea, length of hospital stay, height, weight and Vesikari score in our study was 24.21±4.24 mo, 5.87±1.78 days, 8±2.54 days, 130.6±10.21 cm, 27.7±2.25 kg and 4.7±0.89 resp. Whereas, out of 80 patients in the probiotics group min. age, duration of diarrhea, length of hospital stay, height, weight and Vesikari score in our study was 26.48±4.24 mo, 6.41±1.14 days, 8±1.89 days, 121.9±7.47 cm, 29.2±3.41 kg and 5.1±0.58 resp. Efficacy in the nitazoxanide group was 67 (83.8%) compared with 58 (72.5%) in the probiotic group. Conclusion: Treatment with nitazoxanide and probiotics is effective in the management of children with acute watery diarrhea. Small differences in favor of nitazoxanide were found in comparison with probiotics. Nitazoxanide is an important treatment option for acute watery diarrhea.

In this study, a novel sulfonic acid-modified catalyst for MOFs (UIO-66-SO3H) was synthesized using chlorosulfonic acid as a sulfonating reagent and first used as efficient heterogeneous catalysts for the one-pot conversion of fructose into biofuel 5-ethoxymethylfurfural (EMF) in a cosolventfree system. The physicochem. properties of this catalyst were characterized by Fourier transform IR spectroscopy (FT-IR), transmission electron microscopy (TEM), and powder X-ray diffraction (XRD). The characterization demonstrated that the sulfonic acid group was successfully grafted onto the MOF material and did not cause significant changes to its morphol. and structure. Furthermore, the effects of catalyst acid amount, reaction temperature, reaction time, and catalyst dosage on reaction results were investigated. The results showed that the conversion of fructose was 99.7% within 1 h at 140°C, while the EMF yield reached 80.4%. This work provides a viable strategy by application of sulfonic acid-based MOFs for the efficient synthesis of potential liquid fuel EMF from renewable biomass.
