BACKGROUND : Table olive fermentation is an unpredictable process and frequently performed using traditional practices often inadequate to obtain products with acceptable quality and safety standards In the present study, the efficacy of selected yeast strains as starters to drive fermentations of green and black table olives by the Greek method was investigated. Pilot-scale production by spontaneous fermentation as a control, olives started with previously selected Saccharomyces cerevisiae strains and fermentation driven by com. S. cerevisiae baker’s yeast strain were carried out for each of Manzanilla, Picual and Kalamata table olive cultivars. RESULTS : Time of fermentation was significantly shortened to 40 days to complete the transformation process for all three tested cultivars. Inoculated table olives were enhanced in their organoleptic and nutritional properties in comparison with corresponding samples obtained by spontaneous fermentation The use of starters was also able to improve safety traits of table olives in terms of biogenic amine reduction as well as absence of undesired microorganisms at the end of the process. CONCLUSIONS : Autochthonous, but also non-autochthonous, yeasts can be used to start and control table olive fermentations and can significantly improve quality and safety aspects of table olives produced by many smallholder farmers. © 2018 Society of Chem. Micellar aggregates and thermoresponsive gelation of amphiphilic random copolymers in water were examined in detail, focused on effects of the d.p. (DP) on the behavior. For this purpose, we designed random copolymers carrying hydrophilic poly(ethylene glycol) and hydrophobic dodecyl groups, where the DP was varied from 63 to 358. The content of the hydrophobic monomer was set to 60 mol% to facilitate thermogelation. All the copolymers formed multichain aggregates in water, while the size distribution depended on DP. Since copolymers with larger DP had less composition distribution, the copolymers with 145 or more of DP formed size-controlled aggregates in water. Their concentrated solutions, above the overlap concentration of the aggregates, gelled entirely upon heating, followed by syneresis. In contrast, the short copolymer with 63 of DP formed aggregates with multimodal size distribution, and the concentrated solution underwent macroscopic phase separation upon heating, followed by gelation of the polymer-rich lower layer. As confirmed by small-angle neutron scattering, the copolymer suitable for thermogelation originally formed aggregates consisting of multiple micelle subunits in the aqueous dilute solution, and the thermogelation of the concentrated solution was driven by the phys. packing of the micelle subunits upon heating. Thus, we revealed that the DP hierarchically affected not only the self-assembly of the copolymers into size-controlled micellar aggregates in water but also the thermogelation of the concentrated solutions via intermicellar association

The emulsifying and dispersing mechanisms of oil-in-water emulsions stabilized by 2,2,6,6-tetramethylpiperidin-1-oxyl (TEMPO)-oxidized cellulose nanofibers (CNFs) have been investigated. The emulsifying mechanism was studied by changing the oil/water interfacial tension from 8.5 to 53.3 mN/m using various types of oils. The results showed that the higher the oil/water interfacial tension, the greater is the amount of CNFs adsorbed at the oil/water interface, making the CNF-adsorbed oil-in-water emulsions thermodynamically more stable. Moreover, the amount of CNFs adsorbed on the surfaces of the oil droplets increased with increasing interfacial area. The dispersion stability of the oil droplets was dominated by the CNF concentration in the water phase. Above the critical concentration (0.15% weight/weight), the CNFs formed network structures in the water phase, and the emulsion was effectively stabilized against creaming. Emulsion formation and the CNF network structures in the emulsion were visualized by cryo-SEM.

From the GC-MS raw data several different input data sets for the MSTs can be created, including total chromatogram average mass spectra (TCAMS), segmented average mass spectra (SAMS) and chem. composition Herein, we compared the performance of MSTs on average mass spectrum based data sets, TCAMS and SAMS, against chem. composition and attenuated total reflectance – Fourier transformation IR (ATR-FTIR) spectroscopy in the evaluation of quality of ylang-ylang essential oils, based on their grade, geog. origin and chem. composition, using principal component anal. (PCA), partial least squares regression (PLS) and discriminatory anal. (PLS-DA). PCA based on TCAMS, SAMS and chem. composition showed clear trends amongst the samples based on increase in grade (distillation time). PLS-DA applied to TCAMS, SAMS and ATR-FTIR discriminated between all geog. origins. Predicted relative abundances of the 18 most important compounds, using PLS regression models on TCAMS, SAMS and ATR-FTIR, were successfully applied to ylang-ylang essential oil quality assessment based on comparison with the ISO 3063:2004 standard, where the SAMS data set showed superior performance, compared to other data sets.

For example, hydrogels tend to freeze, and organogels are usually brittle. Herein, organogels were incorporated into a hydrogel matrix for the synthesis of organohydrogels GOHs through polymerization in Pickering emulsion. The rigid organogel domains contribute to enhancing the strength of organohydrogels. Besides this, the organogels derived from 12-HAS self-assembly behavior exhibit a gel-sol transition when the temperature reaches 70°C, thus leading to a thermo-softening behavior in the GOHs. Due to the phase transition of organogel domains and the elastic hydrogel network, the resultant organohydrogels demonstrate high-strain shape-memory performance (over 1000%) which could help achieve full recovery in seconds. Consequently, GOHs are endowed with the potential of practical application in soft robots, wearable devices, and biol. materials.

Each radical undergoes regiospecific or highly regioselective 1,5-cyclization more rapidly than the unsubstituted radical. The rate enhancements, which arise mainly from lowering of the activation energy, can be rationalized in terms of the gem-di-Me effect. 1,5-Cyclizations of monosubstituted species are stereoselective: 2- and 4-methyl-5-hexenyl radicals give mainly trans products, whereas 3-methyl-4-hexenyl radical gives mainly the cis. This behavior reflects the effect of the substituent on the stabilities of cyclic transition complexes in chair-like conformations. Cyclization of 2,2- or 3,3-dimethyl-4-pentenyl radical could not be detected.
