Lipid migration is widespread in food system and has an important effect on food quality. It is urgent to explore the lipid migration in egg yolk after heating. The content of lipids in upper part (HL) was higher than that in bottom part (LL), and the lipids migration in yolk gel under heating were confirmed by MRI (T1) and T2 relaxation time of LF-NMR. Subsequently, the XDR result demonstrated the high lipid content induced the decrease in crystallinity of protein in HL part. The structures of HL part trend to be more ordered, stable (beta-sheet & beta-turns) and flat (alpha-helices) than LL part, also, more water distributed in LL part were observed by FTIR spectrum. The SEM results revealed that lipids migrated from LL to HL part, eventually lead to the protein in HL part of heated yolk gel unfold, the globular structure collapsed and become flatter. Morever, ethyl acetate, hexanal, etc. and hexanal, ethyl acetate, dimethyl-silanediol, etc. were identified as the main VOCs of LL and HL part of heated yolk gel, respectively. Lipid migration result in more lipid-specific volatiles were formed in the HL part, such as hexanal, 3-hydroxy-cyclohexanone, 2-pentyl-furan, D-limonene, 2-ethyl-1-hexanol, benzeneacetaldehyde. Lipid migration in heated yolk gel, caused by heat treatment, resulted in the changes of structure and flavor between HL and LL part.

A new triazole-functionalized tetracarboxylic acid ligand (H4L) has been synthesized and utilized for the fabrication of a 3D Zn-II organic framework with a Zn-4(-COO)(6) cluster as the secondary building unit. The framework exhibits very good thermal stability and consists of dual functionalities of exposed Lewis acidic metal sites and accessible nitrogen-donor Lewis basic sites. The Lewis basic nitrogen sites in the framework serve as CO2 binding sites for highly selective CO2 capture and the presence of exposed Lewis acidic metal sites in the framework make it an efficient heterogeneous catalyst for the chemical fixation of CO2 into value-added cyclic carbonates under ambient conditions.

The N-heterocyclic carbene-catalyzed beta-addition of enals to 3-alkylenyloxindoles was developed. In the presented work, five bio-based and bio-degradable cyclic esters, i.e. lactones, have been investigated as possible phase change materials for applications in latent heat storage systems. Commercial natural lactones such as epsilon-caprolactone and gamma-valerolactone were easily purchased through chemical suppliers, while 1,2-campholide, oxa-adamantanone and dibenzochromen-6-one were synthesized through Baeyer-Villiger oxidation. The compounds were characterized with respect to attenuated total reflectance spectroscopy and gas chromatography coupled with mass spectroscopy, in order to confirm their chemical structures and identity. Subsequently, thermogravimetric analysis and differential scanning calorimetry were used to measure the phase change temperatures, enthalpies of fusion, degradation temperatures, as well to estimate the degree of supercooling. The lactones showed a wide range of phase change temperatures from -40 degrees C to 290 degrees C, making them a high interest for both low and high temperature latent heat storage applications, given the lack of organic phase change materials covering phase change temperature ranges below 0 degrees C and above 80 degrees C. However, low enthalpies of fusion, high degrees of supercooling and thermal degradations at low temperatures were registered for all samples, rendering them unsuitable as phase change materials.

The Rh-catalyzed direct carboxylation of alkenyl C-H bonds was achieved by using pyrazole as a removable directing group. In the presence of 5 mol% RhCl3 . 3H(2)O, 6 mol% P(Mes)(3), and 2 equiv. of AlMe2(OMe), the alkenyl C-H bond of various alkenylpyrazoles was directly carboxylated in good yields under CO2 atmosphere. Furthermore, several useful transformations of the pyrazole moiety of the product were achieved to afford synthetically useful carboxylic acid derivatives in good yields.

A pyridine-based amide functionalized tetracarboxylic acid, 5,5 ‘-(pyridine-2, 6-dicarbonyl)bis(azanediyl)}diisophthalic acid (H4L), was synthesized and its coordination chemistry toward zinc(II) and cadmium(II) ions was studied. The reactions of H4L with Zn(NO3)(2).6H(2)O and Cd(NO3)(2).4H(2)O led to its full or partial deprotonation, respectively, and the formation of the 2D coordination polymers [Zn-2(L)(H2O)(4)](n).4n(H2O) (1) and [Cd-3(HL)(2)(DMF)(4)](n).4n(DMF) (2) (DMF = N,N’-dimethylformamide), respectively. They were characterized by elemental analysis, FT-IR, photoluminescence, thermogravimetry, and single-crystal and powder X-ray diffraction. In 1, the L4- ligand is planar with every carboxylate anion binding a Zn(II) cation and giving rise to a 2D grid with the metals with tetrahedral environments. In 2, the combination of bridging HL3- and dimethylformamide to form trinuclear Cd(II) clusters engenders secondary building block units and generates a layer-type 2D network with the metals with octahedral and pentagonal bipyramid coordination geometries. The topological analyses of 1 and 2 reveal 2,4-connected and 3,6-connected binodal nets, respectively. On account of the presence of Lewis acid (Zn or Cd centers) as well as basic (uncoordinated pyridine and amide groups) sites, 1 and (to a much lower extent) 2 effectively catalyze the one-pot cascade deacetalization-Knoevenagel condensation reactions under quite mild conditions. They act as heterogeneous catalysts, being easy to recover and recycle without losing activity.

Here we describe a photoredox radical hydroboration of alpha,beta-unsaturated esters, amides, ketones, and nitriles with NHC-boranes that uses only an organocatalyst and visible light. The conditions are mild, the substrate scope is broad, and the alpha/beta regioselectivity is high. The reaction requires only the organocatalyst; there is no costly metal, and there are no other additives (base, cocatalyst, initiator).

The American Matsutake, Tricholoma magnivelare (Peck) Redhead, is an edible wild mushroom with a distinctive aroma described as mushroom and spice with subtle floral and citrus nuances. In this study, a total of 36 odorants were identified from T. magnivelare using solvent-assisted flavor evaporation and aroma extract dilution analysis. Stable isotope dilution assays were performed to quantitate 14 odorants with flavor dilution factors >= 64. Odorants with high odor activity values (OAVs) included 1-octen-3-one (OAV 2125), linalool (OAV 650), (2E,4E)-nona-2,4-dienal (OAV 304), and 1-octen-3-ol (OAV 206). An odor simulation model matched the odor profile of the fresh mushroom. Omission studies showed that linalool, hexanal, (2E,4E)-nona2,4-dienal, methyl (E)-3-phenylprop-2-enoate, and 1-octen-3-one or 1-octen-3-ol were essential to the aroma of T. magnivelare. Chiral chromatography showed that a-pinene was a scalemic mixture of 34% (R)-(+) to 66% (S)-(-), while 1-octen-3-ol was present as 95% (R)-(-) to 5% (S)-(+), and linalool was 96% (R)-(-) to 4% (S)-(+). These results establish the base for future investigations into the aroma chemistry of other members of the genus Tricholoma.
