The current study evaluated the key characters of aroma composition in diversified red wines (Cinsaut, Grenache, Cabernet Franc, Petit Verdot, Cabernet Sauvignon, Nielluccio, Tempranillo, Syrah, Merlot and Caladoc). Out of hundreds of volatile compounds 64 compounds were considered for study. Different groups consisting of fatty acids, volatile alcohols, aldehydes, esters, volatile phenols and terpenes were analysed using gas chromatography mass spectrometry coupled with thermal desorption (TD-GC-MS). Among all these diversified classes, alcohols were found as the most dominant group followed by esters and acids whereas aldehydes, phenols and terpenes were found to be minor compounds. Among the varieties, Nielluccio wine recorded highest concentration of total volatile compounds (191.53 mg/L) while, it was least in Caladoc wines (15.45 mg/L). The principal component analysis clearly differentiated Grenache wines based on their relationships between scores and their aroma composition followed by Nielluccio and Cinsuat wines. Out of sixty four compounds, only six aromatic compounds viz. butanediol, isoamyl actate, gamma-Terpene, butanol, acetic acid and furfural have satisfying aroma descriptors with floral and fruity nuances and contribute to differentiate the Grenache wines from other varieties which have similar scores in PC1 analysis. The cluster analysis also suggested that the wines in the same group (Cinsaut, Tempranillo and Syrah), (Cabernet Franc, Cabernet Sauvignon, Caladoc and Merlot) and (Nielluccio and Petit Verdot) had similar aroma characterization. Grenache wines were well differentiated from the sub group formed by other red varieties.

Non-C-3-symmetric supramolecular helices are gaining interest for the design of hierarchical assemblies, for the compartmentalisation or the self-assembly of polymer chains and for application in asymmetric catalysis. Herein, N-substituted benzene-1-urea-3,5-biscarboxamide (BUBA) monomers, which consist of one urea and two carbon-connected amide functions linked to an aromatic ring, are introduced as an easily accessible class of C-2-symmetric supramolecular synthons. In apolar solvents, BUBA monomers assemble into long helical assemblies by means of hydrogen-bonding and aromatic interactions, as assessed by several analytical techniques. To probe the influence of the urea function, BUBA and related benzene-1,3,5-tricarboxamide (BTA) helical polymers have been compared, in terms of their thermodynamics of formation, stability, reversibility and chiral amplification properties. Similar to BTA, BUBA monomers form long helices reversibly through a highly cooperative mechanism and the helicity of their assemblies is governed by chiral amplification effects. However, precise quantification of their properties reveals that BUBA monomers assemble in a more cooperative manner. Also, chiral amplification operates to a higher extent in BUBA helices, as probed by both sergeants-and-soldiers and majority-rules experiments. Compatibility between urea and amide functions also allows the formation of co-assemblies that incorporate both BUBA and BTA monomers. Importantly, a small amount of chiral BUBA monomers in these co-assemblies is sufficient to obtain single-handed helices; thus paving the way towards the development of functional supramolecular helices.

Three novel flexible sulfur-containing MOF materials named Co-URJC-5, Cu-URJC-6 and Zn-URJC-7, based on the 5,5′-thiodiisophthalic acid linker have been synthesized through solvothermal methods and characterized by different physicochemical techniques. Hydrogen adsorption analysis at room temperature reveals that these compounds display a gate-opening type adsorption mechanism at low pressures, attributed to the flexible nature of the H4TBTC ligand. This behavior is even more noticeable for Cu-URJC-6, since the layer arrangement by p-p stacking interactions between the aromatic layers could contribute to the flexibility of the structure. These results can be considered as a representative example to elucidate how MOF structures are built using flexible ligands and more significantly as a promising route for designing materials with selective gas sorption properties.

Amino acid derivatives undergo non-Kolbe electrolysis to afford enantiomerically enriched alpha-alkoxyamino derivatives through intermediate chiral carbenium ions. Lipid migration is widespread in food system and has an important effect on food quality. It is urgent to explore the lipid migration in egg yolk after heating. The content of lipids in upper part (HL) was higher than that in bottom part (LL), and the lipids migration in yolk gel under heating were confirmed by MRI (T1) and T2 relaxation time of LF-NMR. Subsequently, the XDR result demonstrated the high lipid content induced the decrease in crystallinity of protein in HL part. The structures of HL part trend to be more ordered, stable (beta-sheet & beta-turns) and flat (alpha-helices) than LL part, also, more water distributed in LL part were observed by FTIR spectrum. The SEM results revealed that lipids migrated from LL to HL part, eventually lead to the protein in HL part of heated yolk gel unfold, the globular structure collapsed and become flatter. Morever, ethyl acetate, hexanal, etc. and hexanal, ethyl acetate, dimethyl-silanediol, etc. were identified as the main VOCs of LL and HL part of heated yolk gel, respectively. Lipid migration result in more lipid-specific volatiles were formed in the HL part, such as hexanal, 3-hydroxy-cyclohexanone, 2-pentyl-furan, D-limonene, 2-ethyl-1-hexanol, benzeneacetaldehyde. Lipid migration in heated yolk gel, caused by heat treatment, resulted in the changes of structure and flavor between HL and LL part.

Buckwheat was processed by solid-state fermentation (SSF) with the probiotic fungal strain Eurotium cristatum YL-1. The effects of SSF on the phytochemical content, as well as the antioxidant and alpha-glucosidase inhibitory activities, on buckwheat were revealed. Metabolite differences between non-fermented buckwheat (BW) and E. cristatum fermented buckwheat (FBW) were investigated by LC-MS/MS-based untargeted metabolomics. Results showed that 103 and 68 metabolites remarkably differed between BW and FBW in positive and negative ionization modes, respectively. Most phenolic compounds and alkaloids were significantly up-regulated during SSF. Hydrolytic enzymes (i.e., beta-glucosidase, alpha-amylase, protease, and cellulase) were produced by the filamentous fungus E. cristatum during SSF. In vitro spectrophotometric assays demonstrated that the total phenolics content, ferric reducing antioxidant power, reducing power, scavenging activities of DPPH radical and ABTS center dot+, and alpha-glucosidase inhibitory activity of buckwheat were considerably enhanced after processing by SSF with E. cristatum. Additionally, solvents with different polarities significantly influenced the antioxidant and alpha-glucosidase inhibitory activities of buckwheat extracts. Our study indicated that processing by SSF with E. cristatum can greatly improve the phytochemical components of buckwheat and consequently contribute to its antioxidant and alpha-glucosidase inhibitory activities. SSF with E. cristatum is an innovative method for enhancing the health-promoting components and bioactivities of buckwheat.

The report highlights the importance of the self-assembly pattern for the fabrication of advanced functional materials.
