In this study, tender coconuts were treated with high-intensity ultrasound (US) for 20 min at a frequency of 20 kHz and a power of 2400 W. Compared with control group, US treated coconut water had a higher content of total soluble solid and sugar/acid ratio along with a lower pH value and conductivity, and the contents of sucrose, fructose and glucose were also higher. Results from HS-SPME/GC-MS showed that there was no significant difference in the content of volatile compounds in coconut water before and after US treatment. The activities of sugar metabolic enzymes such as sucrose phosphate synthase, sucrose synthase, acid invertase (AI) and neutral invertase were inhibited by US, of which AI had the strongest inactivation. CD and fluorescence spectra showed that the secondary and tertiary structure of AI mol. were destroyed with the increase of US intensity and time, which was confirmed by the change of particle size distribution pattern and SEM. Mol. docking and mol. dynamics showed that US treatment prevented the recognition and binding of sucrose and AI mols., thereby inhibiting the decomposition of sucrose. In conclusion, our results indicate that US can inhibit the activity of AI and maintain the sugar content to increase the quality as well as extend the shelflife of coconut water, which will bring more com. value.

Recent studies have shown that mild to moderate iron chlorosis can have pos. effects on grape quality potential, including volatile profile. The main objective of this work was to investigate, for the first time, how moderate iron stress in grapevines affects the presence of volatile organic compounds (VOCs) in wines. The study was carried out during 2018-2019 seasons, in 20 Tempranillo vineyard subzones with different degree of iron deficiency, located in Ribera del Duero (North-Central Spain). The results showed that moderate iron stress increased in wines the concentrations of VOCs associated with floral notes, such as 2-phenylacetaldehyde, 2-phenylethanol and 2-phenylethyl acetate, while reducing the presence of C6-alcs., responsible for green-herbaceous aroma. A favorable reduction of pH and a betterment of parameters related to color were detected in wines from iron deficient subzones. Chlorosis incidence was associated to improvements in wine sensory attributes as layer intensity, black fruit and aroma intensity.

Petit Verdot is widely used in blend wines but only few studies focus on the effect of microorganisms on the aroma formation of its monovarietal wine. This study explored the correlation between microorganisms and aromas during spontaneous fermentation (SF) and inoculated fermentation (IF). The changes of volatile compounds and microbial succession during the wine fermentation were monitored by HS-SPME-GC-MS and HTS. The results showed that SF resulted wines with more aromatic and regional characteristics because of significantly higher content and varieties of higher alcs., acetate esters and C6 compounds, thus highlighting the ′floral′ and ′fruity′ characteristics of Petit Verdot wine. The PCA and OPLS-DA showed that there were significant differences in aromas and microorganisms under SF, and IF, while correlations between them were established by OPLS and Spearman (VIP >1, P < 0.05). Among them, four unique core bacteria in SF were pos. correlated (P < 0.05) with four important higher alcs. and most of the esters. This work is part of the valorization of the Haloxylon scoparium plant, belonging to the Chenopodiaceae family and native to southeastern of Morocco. The aim of the present work is to study the chem. composition of this plant, to estimate the phenolic compounds contents of its extracts and to evaluate their antioxidant powers. After extraction by maceration of the aerial and root part of Haloxylon scoparium, the extracts obtained are fractionated by liquid-liquid extraction using solvents of different polarities. The best extraction yield is obtained in the aerial part 23.54% against 10.99% for the root part. The anal. carried out by the coupling of gas chromatog. with mass spectrometry (GC-MS) shows that the root part contains mainly carbohydrates, however the aerial part consists mainly of alkaloids. The total polyphenol content obtained in the root part 69.86 mg/gEAG (mg/g of gallic acid) is significantly higher than that in the aerial part 56.79 mg/g EAG. The hydrolysable tannins are the predominant polyphenols of the root part of Haloxylon scoparium corresponding to 83.87 mg/g EAT (mg/g of tannic acid). The antioxidant activity of the various extracts obtained is evaluated by two methods: the DPPH (1,1-diphenyl-2-picryl hydrazyl) free radical scavenging test and the ferric reducing antioxidant power (FRAP). The examination of the inhibitory concentration values shows that the butanolic extract of the root part is the most active with values of IC50 = 0.06 mg/mL and IC0.5 = 0.19 mg/mL resp. for the DPPH and FRAP tests. The other extracts also showed a very interesting potential as antioxidants.

An environmentally friendly packaging material was produced from starch with the incorporation of citrus lemon peel ethanol extract Gas chromatog.-mass spectrometry of the citrus lemon extract revealed the presence of compounds such as fatty acid, terpenes, aromatic esters, aldehyde, and polyphenolics. Bioplastic films produced with different percentages of the citrus lemon ethanol extract are designated as film0%, film5%, film10%, film15%, and film20%. From the physico-tensile properties of the bioplastics, the d. ranges from 0.12 to 0.20 g cm-3, thickness, 0.25 to 0.74 mm, moisture content, 12.00 to 14.86, water-solubility, 1.23 to 2.84%, opacity, 0.36 to 0.67% and, tensile strength, 9.94 to 25.60 MPa. The 2,2-diphenyl-2-picrylhydrazyl anti-oxidant radical activities of the biofilms range from 1.44 to 6.19% and total phenol content, 0.01 to 0.32%. Proximate anal. of the fish after packaging revealed a decrease in moisture content from 38.69% (film0%) to 12.01% (film20%) and an increase in fat (20.93%-film0% to 24.92%-film20%), and protein (30.19%-film0% to 37.06%-film20%). Biochem. results revealed closeness of the peroxide, saponification, and total volatile basic nitrogen values of the fresh Pp fish and packed fish with film20%. The fatty acid anal. results showed that bioplastic with the highest amount of added citrus lemon extract had the best result; lowest saturated fatty acid, highest unsaturated fatty acid, and polyunsaturated fatty. Thus, good active packaging films have been produced from this research using waste citrus peel ethanol extract additive.

The present research evaluated some chem. composition in tissues from the leaves, seed, and fruits P. amygdaliformis. In leaf samples, phenolics compounds are predominated, whereas, in fruit samples, sugars, organic acid predominated. Among phenolic compounds, chlorogenic acid and fumaric acid were found in the highest amount in leaf tissue. In addition, the amounts of minerals in the fruit tissue had high values. In the P. amigdaliformis seed oil, oleic and linoleic acid were the primary fatty acids. This study shows that these wild pears have beneficial natural compounds and can also be used as a new source of natural oil.

This study evaluated the effects of diammonia phosphate (DAP) on the non-volatile and volatile compounds of lychee wine fermented with Saccharomyces cerevisiae, when added in two different quantities (0.5 mmol/L and 1.5 mmol/L). It was found that DAP supplementation improved the utilization of ammonia and inhibited the consumption of proline and valine, which regulated the production of α-ketoglutaric, succinic and fatty acids. The addition of 0.5 mmol/L DAP improved the rate of sugar catabolism by slightly increasing yeast growth, thus inducing a higher production of glycerol than of ethanol. Addnl., more odor-active terpene derivatives (trans-β-damascenone, o-cymene, δ-guaiene) in lychee juice were retained after the fermentation added with 0.5 mmol/L DAP. However, the addition of 1.5 mmol/L DAP slowed rates of sugar metabolism and glycerol production, and significantly enhanced the production of acetic acid. Furthermore, with the exception of limonene, the higher DAP addition did not retain more terpene derivatives These findings, therefore, suggest that a moderate addition of DAP could enhance the flavorful character of lychee wine.

Thermophys. properties of mixtures of fatty acid esters with alkanols were measured in the whole composition range as a function of temperature for understanding features of biodiesel blends. Likewise, mol. modeling studies using quantum chem. and classical mol. dynamics simulations led to a detailed characterization of these systems at the nanoscopic level. The nature of hydrogen bonding in these liquid mixtures was particularly analyzed from macroscopic properties and theor. modeling results. The reported exptl. and computational study allowed to infer the relationships between the intermol. forces and addnl. microscopic features and the mixtures macroscopic properties, which are relevant for the development and characterization of biodiesels. The non-ideality behavior of the studied systems shows relevant changes in hydrogen bonding structuring upon mixing, with the fatty acid esters largely disrupting the alcs. self-association, although ester – alc. hydrogen bonding is developed, this type of interactions is remarkably weaker than those for alcs. Therefore, the studied biodiesel blends macroscopic properties may be tuned and controlled through the amount of alcs. in the mixtures and rooted on its effect on hydrogen bonding.
