Recently, the use of alternative vessels to oak barrels during winemaking has become increasingly popular, but little is known about their impact on the chem. composition of the resulting wines. To address this issue, a Sauvignon Blanc wine was elaborated from the same grape juice by using cylindrical stainless-steel tanks, oval-shaped concrete vessels, oval-shaped polyethylene vessels, and clay jars in triplicate. Each vessel was used for alc. fermentation and the aging of wines over its own lees. Wines elaborated in concrete vessels showed the highest pH and the lowest titratable acidity, most likely related to the observed release of inorganic compounds from the concrete walls. Little effect of the vessels was seen on the wine color and phenolic composition Wines elaborated in clay jars showed the highest turbidity and the highest content of soluble polysaccharides, while those made using cylindrical stainless-steel tanks showed the highest content of volatile compounds Despite the observed differences, all of the vessels tested seem suitable for white wine production since every wine showed chem. features that corresponded with the quality standards of Sauvignon Blanc wines.

The establishment of the corresponding standards of quality to promote the commercialization of Rubus ulmifolius Schott (Rosaceae) blackberries from Calabria (Italy) has been aimed in this study. Data on the volatile composition gathered by Solid-Phase Microextraction (SPME) followed by GC-MS have been complemented with the study for the first time of physicochem. parameters and antioxidant capacity of wild and cultivated blackberries collected in seven different locations of Calabria. Wild fruits showed significantly higher dry matter content (16.34-22.14%) and pH (3.92-5.12) and lower total acidity (0.23-0.74 as % of citric acid) compared to the cultivated sample (dry matter: 15.31%; pH: 3.30 and total acidity: 1% citric acid), whereas color and total soluble solids were similar. Antioxidant capacity (DPPH assay) of wild blackberries, correlated (r = 0.71) with results from ABTS assay, was significantly higher (SE50 = 1.6-3.4 mg DW), in agreement with its higher content of total anthocyanins and total phenolics. Ethanol (11.8-32.4%), trans-2-hexenal (2.7-21.3%), methylbutanal (5.7-17.4%), and Et acetate (4.6-11.9%) were the major compounds in both wild and cultivated blackberries. Although the presence or relative concentration of several volatiles (e.g. p-cymen-8-ol, decanal, 3-hydroxy esters, etc.) seemed to be characteristic of the harvest location/blackberry type, further research on a higher number of samples should be carried out to confirm these results. The comprehensive characterization addressed for the first time in this paper is a valuable preliminary contribution to satisfy the demand by consumers and farmers of objective data to support the premium quality of Calabrian blackberries.

Merlot is one of the most cultivated cultivars in the world since it easily adapts to different climatic conditions. Leaf removal (LR) is commonly used for red berry varieties but in cold wine-growing areas and nothing has been reported on the effects of LR on Merlot cultivated under Mediterranean climate. The aim of the research is to evaluate the influence of this technique on grape and wine quality as well as wine aroma potential of Merlot cultivated in Sicily. Vines were subjected to LR for two consecutive years, and productivity and chem. parameters were monitored in grapes, whereas chem. composition and volatile aroma compounds, analyzed by gas chromatog. mass spectrometry, were monitored in wines. LR pos. influenced the plant yield, increased the sugar content and decreased the acidity in grapes at harvest. The wines of the defoliated treatment showed a higher content of total polyphenols and anthocyanins, higher color intensity, and lower color hue. Merlot wines obtained under Mediterranean climate were characterized by a high amount of esters and varietal aromas and the content of most of volatiles were even increased by the LR with pos. effects on the aroma potential of Merlot wines. The vintage affected almost all the studied parameters with the warmer and dryer vintage enhancing the LR effects on grapes and wines. This is of great interest in the light of the climate changes towards the global warming and the increasing aridity of the Mediterranean area.

The compatibility of 11 bioderivable diesel blendstocks with 17 elastomer materials common to fuel storage, dispensing, and delivery systems was evaluated though volume and hardness measurements. The blendstocks included two alcs. (1-octanol and 1-nonanol), two acid esters (Me decanoate and hexyl hexanoate), tri(propylene glycol) Me ether (TPM), butylcyclohexane, two ketones (2-nonanone and 2-pentanone), biodiesel, and renewable diesel. Each blendstock was blended with diesel in concentrations of 0, 10, 20, and 30 wt %. The elastomers included two fluorocarbons, six acrylonitrile butadiene rubbers (NBRs), and one each of fluorosilicone, neoprene, polyurethane, styrene butadiene rubber (SBR), hydrogenated acrylonitrile butadiene rubber (HNBR), a blend of NBR and PVC (OZO), epichlorohydrin/ethylene oxide (ECO), ethylene propylene diene monomer (EPDM), and silicone. Specimens of each elastomer material were immersed in the test fuels for a period of 4 wk and measured for volume and hardness. Afterward, they were dried at 60°C for 20 h and remeasured. The results showed that the alkanes, esters, and alcs. were suitable with many of the elastomers. For some materials, such as neoprene, these blendstocks improved the compatibility compared to neat diesel. In contrast, the ketones and TPM produced unsuitable volume expansion (>30%) and softening in many of the elastomers including the high-performance fluoroelastomers. Anal. of the results showed that the swelling behavior is predominantly due to polarity of the elastomer and test fuels.

A novel and green catalytic system based on a Pd stabilized CuZnAl catalyst was designed for one-pot conversion of natural oil components to the corresponding alcs. or long-chain linear and branched alkanes with high selectivity and atom economy. When Me decanoate was used as the model compound, a nearly full yield of n-decanol was obtained at 200 °C and 2 MPa H2 within 8 h. 100% Decane was produced when acidic HZSM-5 was introduced under the same reaction conditions, and the selectivity of n-decane and i-decane could be tuned by temperature Cu species were verified as the active sites for lipid conversion, while a small amount of Pd could stabilize the catalyst to avoid Cu leaching. The reaction pathway involved hydrogenation, where Me decanoate can be equivalently converted to methanol and decanol or decane, and no extra CO2 or CO from decarboxylation or decarbonylation was detected. This system increases the sustainability and economy of natural oil conversion to valuable liquid fuel and chems.

Two exptl. conditions were studied using the same GC3 column set, differing principally in the modulation period from the 1D to 2D columns: 4 s vs. 8 s. Under the first set of conditions, the average SEM was 97 (±22), in excellent agreement with the SET of 97 (±18). The second set of conditions improved the average SEM to 181 (±27), also in agreement with the average SET of 176 (±26). The average S/NRel following correction for the mass spectrum acquisition frequency was 38.8 (±11.2) and 59.0 (±27.2) for the two sets of conditions. The enhancement in S/N is largely attributed to moving the signal to a higher frequency domain where the impact of “”low frequency”” noise is less detrimental. The findings here provide strong evidence that GC3 separations can provide enhanced detectability relative to 1D-GC and comprehensive two-dimensional gas chromatog. (GCxGC) separations

There has been ascending demand on beverages enriched with dairy proteins. Calcium chelators can improve transparency and stability of beverages with nonfat dry milk (NFDM) resulting from dissociation of casein micelles. In this study, vanilla-flavored model beverages with 5% or 10% weight/weight NFDM were manufactured with or without 0.43% weight/weight sodium hexametaphosphate (SHMP), phys. properties were studied during 70-day storage at 4°C and room temperature (RT), and sensory properties were evaluated during storage at 4°C. SHMP resulted in decreased turbidity, particle diameter, and zeta-potential magnitude. The turbidity was stable at 4°C but increased from 161 to 315 NTU and 333 to 818 NTU, resp., for beverages with 5% and 10% NFDM after 70-day storage at RT. SHMP resulted in insignificant and significant increase in viscosity for 5% and 10% NFDM beverage, resp. The 10% NFDM beverage with SHMP also developed into a gel during storage at RT but remained fluidic at 4°C. Descriptive sensory anal. suggested that SHMP resulted in soapy flavor and salty taste of beverages with decreasing vanilla and milky flavors after 70-day refrigerated storage. Findings from the present study suggest that SHMP may be used to reduce the turbidity of refrigerated beverages based on NFDM.

Long-horned grasshopper (Ruspolia differens Serville) is a tasty delicacy in over 20 African countries. This study evaluated the impact of diverse post-harvest thermal treatment (blanching, boiling, toasting, and deep-frying) on the nutrients, total flavonoid content and sterols preservation of R. differens products. Crude protein, ash, and fiber of R. differens was drastically reduced by deep-frying technique. There was increase in Omega-3 (α-linolenic acid), Omega-6 fatty acid (linoleic and arachidonic acids) and sterols [(22Z)-27-Norergosta-5,22-dien-3β-ol, cholesterol, campesterol, cholest-4-ene-3-one and β-sitosterol] and flavonoids (2-3 folds) during blanching compared to other techniques. The iron and zinc content increased significantly in blanched and boiled products of R. differens. Thus, losses of nutrients, total flavonoid content and sterols during processing of R. differens for food can be mitigated by employing blanching technique, which is cheaper and least time-consuming. The implications of these dietary and therapeutic compounds on human nutrition and health are discussed.
