BACKGROUNDWoody liquid flavourings extracted from different varieties of vine shoots and oak chips have been characterized by gas chromatog.-mass spectrometry to compare the profile of compounds as potential contributors to the organoleptical properties of wine and spirits aged in oak barrels.
